Before bed, I put together:
I don't cook any of it. It is so quick and easy to make.
- 1.5 cups old-fashioned quick oats
- 2.5 cups milk (I use plant based, currently Oatly oat milk)
- 2 tbsp chia seeds
- .5 cup shredded coconut
- dried fruit (e.g. prunes, tart cherries)
- .5 tsp salt
- cinnamon & nutmeg
In the morning, I sometimes add yogurt, maple syrup, nuts, hemp seeds, and if I didn't add dried fruit: frozen blueberries.
You can add anything else you think would be good with the basics: oat and milk...and not use everything I did.
I use to make this on Monday nights so I had it on Tuesdays before my yoga class (that I don't go to anymore) since it doesn't take as long to finish assembling as my usual breakfast. I made enough to have it two days in a row which worked well for me having it on Wednesday before going out early on the paddle board (weather permitting). My partner likes it too; the current recipe lasts for 2-3 days for both of us.
